Spring Cleaning Detox Salad

The change of seasons is upon us; it’s the perfect time to give your body a nice spring-cleaning boost! Supporting your body’s natural detoxification pathways is a great way to get rid of the old and make space for new, both physically and emotionally. Spring is all about movement and fresh new energy— this fresh baby spinach green salad recipe by MUIH Master of Science in Nutrition and Integrative Health Candidate and Nutrition Intern Rachael Adams is the perfect way to celebrate!

Kale Sunshine Salad

This flavor-packed salad makes for a light, but satisfying summer lunch or dinner side dish. Kale has the highest antioxidant value of any other fruit or vegetable, meaning its ability to protect our cells from free radical damage is second to none.

The salad also uses turmeric, an herb that has been used for thousands of years for helping to alleviate arthritis and joint inflammation as well as support liver detoxification. Thank you to Nicki Rubin, a clinical herbal intern in the Natural Care Center, for sharing this delicious salad recipe!

Tri-Color Mayo-Free Egg Salad

This easy summertime recipe is provided by Sharon Chan, RD, LDN, a graduate nutrition student intern in our on-campus Natural Care Center. She can be reached via email or 301-678-3623. Learn more about our academic programs in Nutrition and Integrative Health.
  • 5 hard-boiled eggs, peeled, cut to bite size
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of whole grain mustard
  • 1 cup of plain Greek yogurt (or homemade yogurt cheese)

Mesclun with Spicy Walnuts and Mulberries

Black mulberries are dense and delicious and in season right now. From the fig family, mulberries looks more like blackberries—with a narrower, tubular shape. Mulberries are known to nourish the blood, calm the spirit, and relieve constipation in the elderly. Be mindful that they will stain everything, including lips, fingers, and clothing! This recipe is from chef Eleonora Gafton, with MUIH’s Master of Science in Nutrition and Integrative Health program.
